If you hear me say it once, you will probably hear me say it a hundred times:  Americans are overfed and undernourished!  This is one reason that "portion control" is not the answer to the obesity epidemic--we are virtually starving to death for proper food as it is!  No, we need not deprive ourselves of food, per se, we need only begin to eat differently!  The solution is expressed simply and elegantly in Dr. Joel Fuhrman's health equation:  H = N/C , where H = Health, N = Nutrients, and C = Calories.

For some reason, people love to brag to me about eating olive oil--this seems to apply to everyone, but especially to certain people who are overweight and suffering from a variety of chronic ailments.  "I cook with olive oil", they proudly inform me, "it's the only oil I use!"  Others, who are just learning about the benefits of a predominantly whole-foods, plant-based diet, are enthusiastic about recipes that require olive oil.   As this presentation by Jeff Novick makes clear, olive oil is not health food!
